Long summer days call for fun in the sun and some good BBQ grilling time. Let’s explore some tasty summer recipes while also remembering to practice safety first!

Meats, meats, meats. Most will stick with the basic known recipes such as ribs, steaks, kebabs, hot dogs and burgers, but adding more flavors to these can enhance the meat’s natural flavors. Try an international day and embrace recipes such as Brazilian churrasco, Korean BBQ or Mediterranean kebabs. Explore various marinades and rubs for different types of meat and poultry.

Vegan & vegetarian. Outdoor grilling doesn’t just have to be meat. Vegan and vegetarian recipes outside with a nice smoky flavor and char are just as scrumptious. Grill up a French dish like ratatouille with charred summer vegetables dressed in olive oil, fresh herbs and garlic. Grilled Zucchini with lemon salt is a game-changer since it is so bright and fresh. Fresh corn on the cob is always a crowd-pleaser, but try various seasonings and flavored butter on it for a twist, like Mexican street corn. Mushrooms are amazing grilled, especially portabella mushrooms. Marinade them the night before. Grilled eggplant and asparagus napoleons are a spectacular side dish layered with creamy ricotta, Italian cheeses and tender grilled asparagus.

Enjoy various drinks complementing grilled dishes like watermelon mojitos, peach sangrias or lemonade variations. Lavender lemonade with vodka or gin is a summer solstice favorite.
